Dear Customers,

We have reason to be excited about this particular weekend , not only because of the fun we expect to have this Father’s Day, but also because Isabella and Richard, owners of the Vintage Pizza Pie Company, will be here on Saturday with their wood-fired oven.

Saturday, June 17th from 11 a.m. to 3 p.m.

Isabella and Richard will be in our courtyard with their 1938 Chevy Maple Leaf Truck and wood-fired oven.

For one day only, you may purchase the Vintage Pizza Pie’s pizza, hot, directly from their wood-fired oven! Mmm…delizioso.

Tastings of the Vintage Pizza Pie Co.’s pizza will be provided within the store!

Pizzas are also available from our freezers and may be heated in just 5 minutes.

Isabella and Richard have learned from the best chefs in Ontario as to how to create delicious Neapolitan-style, thin crust pizza. They take great pride in the quality of their pizza and they also take great pride in the community as they support local farmers.

They prepare Neapolitan pizza the old fashioned way, as it would have been done centuries ago. The dough is as it should be, consisting of only four ingredients: water, flour, salt, and yeast.

Our pizzas are baked in a 3000 pound Le Panyol Camelot oven which burns exclusively apple wood, lilac wood, hard maple & oak to reach and maintain temperatures in excess of 900 degrees F. At such high temperatures, liquid water in the dough vaporizes instantly, expanding within tiny bubbles already formed by the yeast to create a puffed and delicate outer rim. The raised crust is typical of the Neapolitan-style ~ a flame-kissed delicate dough.” – Vintage Pizza Pie Co.

This is a big weekend for us as we believe customers will want to add some lovely parmigiana to their pizzas this Saturday. Believe me, there is nothing like fresh parmesan grated over your Italian meal or salad. Of special mention is DOP Caseificio Genngri Riserva which is an authentic Italian Parma Reggiano aged 18 months.

We also expect lots of customers will want to celebrate Father’s Day outdoors with their family and friends, and as you know, a well stocked cheeseboard is the best way to have fun. Below are some wonderful cheeses we will feature this weekend…

Lindsay Bandaged Cheddar  has won multiple awards!  It is hand-crafted in small batches using premium goat’s milk and is made in the old world way by wrapping the cheddar wheel with cheesecloth which helps to age and  preserve the flavor.  Each wheel is placed on a pine board in our humidity controlled aging room and turned each week to assure even aging. Aging the cheese in this way yields an earthy, nutty, and slightly crumbly cheese.
